The Potsdam Food Co-op's Cheese of the Month for March will be offered during their 2nd Thursday Sampling on March 8th. From 3:30 - 5:30pm you will have the opportunity to sample Danascara; an aged semi-hard artisanal raw milk cheese, made from the pasture-raised sheep of the Footehills Farm in Fonda, NY, located in the Mohawk Valley. Danascara has a mild distinctive flavor reminiscent of Spanish Manchego, but with a light cheddar note. Its natural and edible rind is rubbed with cocoa and olive oil. It is one of the few sheep's milk cheeses produced in the US that is made from fresh milk every 24-48 hours. Suggested wine pairings with Danascara include Spanish Cava, Chianti Classico, or Cabernet Sauvignon. This unique cheese may also be served with McKenzie Pure Pot Still whiskey from the Finger Lakes Distillery. Suggestions: Danascara is delicious on its own but also pairs well with cured meats, olives, and a good crusty bread. Make it the star of your Spanish-themed cheese board that also includes marcona almonds, fig jam, or honey and dried apricots, or another dried fruit. Try serving it alongside grapes or melon, or use it in your favorite cheese puff recipe. The Potsdam Food Co-op & Carriage House Bakery and Deli is located at 24 Elm St. and is open daily from 8am to 7pm.
