All are invited to sample two flavors of Organic Artisan and Farmstead Cheeses from Neighborly Farms in Vermont; Habanero Cheddar & Raw Milk Sharp Cheddar. Raw Milk Sharp Cheddar is a full-flavored cheese made from the raw milk of the farm's Holstein cows. Raw milk cheeses go directly into the cheese vat at 38 degrees. The heating process is replaced with aging for at least 60 days. This process pasteurizes the cheese naturally and preserves its original flavor profile. Raw Milk Sharp Cheddar is aged 12-18 months and its full flavor lingers on the palette. Habanero Cheddar, a pasteurized cheese, is a hot and spicy cheddar with a speckled orange appearance. Neighborly Farms is a completely organic farmstead and produces 11 organic cheeses that all use vegetable rennet.
